Gluten Free Chocolate Chip Cookies

Sonya Walos’ recipe for gluten-free chocolate chip cookies. Finally a gluten free treat that is sweet and savory and most importantly, doesn’t taste like cardboard!

A little drama on this weeks sweet and savory episode on Recipe to Riches; Sonya Walos’ recipe won against the competition, but she was disqualified for the grand prize for having a family member that works for one of the competitions subsidiaries. Duh-licious took on the task of remaking the recipe (sans drama)– gluten free and alternative recipes are not always quite as tasty, but this particular cookie stands up.  If you don’t feel like tackling the recipe, the pie will be available this week at stores where President Choice products are sold.

Gluten Free Chocolate Chip “Smart Cookies”

- 1/2 cup unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 1/4 cup packed brown sugar
- 1 unit egg
- 1/2 teaspoon vanilla
- pinch salt
- 1/2 cup brown rice flour
- 1/3 cup potato starch
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon tapioca starch
- 1/2 teaspoon xantham gum
- 3/4 cup unsweetened medium coconut
- 1 1/2 cups milk chocolate chips
- 2 cups Nature’s Path Organic Crunchy Vanilla Sunrise Cereal

    For a gluten free recipe this looks really good. I so wonder how it would taste! Do you go gluten free or was it this recipe that intrigued you?

    Nancy– Pies were displayed 2 weeks ago, and Savory and Sweets (cookies) are on display this week. Both are still available at PC.

    Steve– I dabble in alternative cooking. I don’t think baking with refined ingredients is necessarily sustainable, not part of a healthy lifestyle. I bake because I love it, and I always advocate moderation. With alternative baking I think it is a compromise between being healthy and indulgent. :)

    I’ve just made these using Mesa Sunrise cereal as it was all I had and they are delicious! Also used white rice flour and corn starch insted of the tapioca starch.
