Ice Cream Cake Cones

A fun little idea that uses left over cake and ice cream to make ice cream cake cones. Deconstruct the flavors of your favorite cakes and build them back together in this recipe.


Ice Cream Cakes
Ingredients:

-  Left over cake (as listed below)
-  Ice cream (as listed below)
-  Ice cream cones
-  1 cup chocolate, melted (to dip and decorate ice cream cones)

 (Strawberry Shortcake)
- ½ cup strawberries, washed and diced
- 2 cups vanilla ice cream
- 1 cup whipping cream (whipped)
- vanilla cake left overs
- almonds (to decorate the ice cream cone)

(Black Forrest Cake)
- Kirsh-soaked cherries
- 2 cups vanilla ice cream
- 1 cup whipping cream (whipped)
- chocolate cake left overs
- chocolate shavings (to decorate)

 (Lemon Meringue Pie)
- 1 cup Lemon Curd
- vanilla cake left overs
- 2 cups meringue
- shredded coconut (to decorate)

 Directions:
1. Allow ice cream to thaw in fridge for 30 minutes—it’ll be soft enough to scoop and it make it easy to fill the cones. I put my softened ice cream in a piping bag to make things easy.

2. Over a double boiler, melt the 1 cup of chocolate. Dip the edges of each cone into the chocolate, and dip in desired garnishes (coconut, almonds, chocolate pieces).  Place decorated cones onto a parchment-lined cookie sheet to set.

 

Assembling the cake cones:

 Layer the ingredients of the cake until you fill the cones:

 For the strawberry shortcake, garnish with a dollop of whip cream and a strawberry.
 

 For the black forest cake: garnish with a dollop of whip cream, drizzle with chocolate and chocolate shavings, and a cherry.

 For the lemon meringue, layer the curd and cake. Garnish with meringue, and place the cones in oven-safe cups. Bake at 350’F for 3-4 minutes until the meringue toasts to a golden brown.  You don’t want to leave them in the oven too long or the waffle cone will unravel, the chocolate on the edges will burn, and your meringue will toast.

 Store in the freezer on a parchment-line cookie sheet until you are ready to serve. Enjoy.
